Directions

  • Step 1

    Finely chop the chipotle pepper and garlic by hand or in a mini food processor.

  • Step 2

    Mix spices and chipotle pepper in a small bowl.

  • Step 3

    Coat chicken breast with the paste.

  • Step 4

    Spray a skillet with non-stick spray or use a grill pan. Grill or pan-fry chicken 6-8 minutes depending on the thickness of your chicken breast or until the internal temperature on the chicken reaches 165 F. Let rest 5-10 minutes before cutting.

Serve with romaine salad, beans, rice, fresh cilantro, salsa, and sour cream or greek yogurt. 

If you want, you can leave the chicken it in the fridge after coating it with the spice paste. I do not believe that marinating chicken breasts is helpful in flavor or keeping the meat moist.
