Directions

  • Step 1

    Chop zucchini, and mushroom. Grate garlic, and ginger. Cut chicken into thin bite-size pieces and coat with cornstarch.

  • Step 2

    Make the sauce by combining soy sauce, sugar substitute, and rice vinegar in a small bowl.

  • Step 3

    Heat sesame oil in a skillet over medium-high heat. Add chicken and cook until it is done, 3-5 minutes depending on the thickness of your chicken. Set aside.

  • Step 4

    Add zucchini, and mushroom into the skillet. Let cook for 5 minutes. Add garlic and ginger and let cook for another minute.

  • Step 5

    Add back the chicken and sauce. Cook until sauce thickens, about 2-3 minutes.

Serve over rice or cauliflower rice. Sprinkle over with sesame seeds.
