Doubling the liquid for oatmeal yields a bigger serving of your oatmeal for the same amount of calories.

Directions

  • Step 1

Combine all ingredients except pumpkin puree in a pot or a big microwave safe dish.
Microwave for 4-5 minutes, let rest until it cools.
Stove, let simmer for 10-15 minutes, let stand until it cools.

  • Step 2

Once cooled leave in the fridge for a couple of hours or overnight.

  • Step 3

When ready to eat stir in pumpkin puree and microwave for one-two minutes. If you like a pudding-like consistency enjoy it cold.

Sweeten to taste and serve topped with pumpkin pie spice. Works well with raisins stirred in too!

I recommend adding a dash salt in your oatmeal. Salt enhances the flavor by bringing out the sweetness and nuttiness from rolled oats.

I make my oatmeal using double the amount of water and cook time known as the voluminous oatmeal trick. See this recipe for reference. If you prefer your oats the regular way just follow the directions on how to cook the oats according to the package and add the other ingredients in order.
