Great over salads, seafood or grilled chicken. If you find that yours is too thick, add water in small increments.
Add cilantro and garlic to a food processor. Pulse until finely chopped.
Add the rest of the ingredients and blend. Add salt and pepper to taste. Let stand covered in the fridge for 15 minutes before serving. Can be kept in an airtight container in the fridge for 2-3 days.
Use fresh lime juice for best results. For a thinner dressing add water in small increments.
You can also make this without a food processor, just finely chop everything by hand and combine.
